I echo Eric's view of the Nikon D70 (his recommendation went into my
purchase decision), although I like their 18-200 mm zoom which is long
enough for most launch shots, but also short enough for around camp.

You want some kind of digital SLR. The resolution (megapixels) is actually
not very important so feel free to get one that is a few years old. The
benefits of an SLR are that there is no delay between pushing the shutter
and the photo being taken, and the use of changeable lenses. I use a Nikon
D70 and usually use a 75-300mm zoom for launch photos. Set in continuous
mode, I can take 4 or 5 pictures per second, which is plenty to catch that
great liftoff shot. My photos got 1000x better after I bought this camera.
The D50 (now obsolete) is cheaper, and Canon has some nice units as well.

Most of the "point and shoot" type cameras make it extremely difficult to
catch the action, especially on a high g liftoff.
